La chef Maike Siegel nos lo explica a trav\u00e9s de<img loading=\"lazy\" decoding=\"async\" class=\"pull-right size-full wp-image-25405\" src=\"http:\/\/ec2-54-245-22-188.us-west-2.compute.amazonaws.com\/wp-content\/uploads\/2017\/05\/cien-y-gas-02.jpg\" alt=\"\" width=\"403\" height=\"280\" \/> su\u00a0experiencia.<\/p>\n<p style=\"text-align: justify\">Maike Siegel se dedica a la gastronom\u00eda, pero desde la arista m\u00e1s cient\u00edfica y acad\u00e9mica. Ella considera que la educaci\u00f3n en Chile de las artes culinarias es tradicional en el sentido de que se aprende a repetir un m\u00e9todo y una preparaci\u00f3n, pero se excluye la contraparte cient\u00edfica y el desarrollo de un pensamiento anal\u00edtico. No obstante existe una simbiosis entre ciencia y gastronom\u00eda, y esta otorga mayor independencia respecto a una preparaci\u00f3n. \u201cLa ciencia aporta a la gastronom\u00eda una metodolog\u00eda m\u00e1s ordenada y en lo personal me permite crear nuevo productos culinarios o usar materias primas nuevas\u201d.\u00a0<\/p>\n<p style=\"text-align: justify\">Tras concluir sus estudios de postgrado en el Basque Culinary Center (Espa\u00f1a) regres\u00f3 a Santiago y se integr\u00f3 al equipo de la Unidad de Ingenier\u00eda Gastron\u00f3mica de la UC, que est\u00e1 liderada por el profesor Jos\u00e9 Miguel Aguilera, Premio Nacional de Ciencias Aplicadas y Tecnol\u00f3gicas 2008. Inicialmente trabaj\u00f3 como asistente del curso de pregrado llamado Introducci\u00f3n a la Ingenier\u00eda Gastron\u00f3mica. Ahora tambi\u00e9n se integr\u00f3 a los proyectos de investigaci\u00f3n que se pusieron en marcha en 2017 y donde Siegel aporta la parte culinaria mientras que los otros integrantes del equipo desarrollan la parte de ingenier\u00eda de los alimentos.\u00a0<\/p>\n<p style=\"text-align: justify\"><strong>Anchoas, anchoitas\u00a0<\/strong><\/p>\n<p style=\"text-align: justify\">Hoy en d\u00eda, la anchoa chilena es barata de pescar, pero se usa s\u00f3lo para la producci\u00f3n de harina de pescado. El proyecto en el que colabora Siegel es atractivo y novedoso en el sentido que desde un principio se ha concebido como una aplicaci\u00f3n gastron\u00f3mica. La primera parte del proyecto es experimental y consiste en caracterizar el producto, es decir, se identifican las propiedades que tiene y lo que se puede hacer con el recurso. Luego se saca prototipos de productos, donde la anchoa es el ingrediente principal. \u201cLas presentaciones pueden variar\u00eda desde snack, salsa, anchoas en escabeche hasta conserva, pero cada prototipo podr\u00e1 ser replicado en un restaurant, en un hogar y puede ser escalable a nivel semi o industrial\u201d, puntualiza la chef.<\/p>\n<p style=\"text-align: justify\">En pa\u00edses del Sudeste Asi\u00e1tico e Italia se producen salsas de pescado a partir de anchoas y sardinas. \u201cNosotros quisimos replicar el proceso y para esto desarrollamos un dise\u00f1o experimental \u00a0de 18 muestras, con variables sometidas a distintas concentraciones de sal, anchoa entera, filetes de anchoa, filetes y huesos de anchoa, etc. y luego se sometieron a fermentaci\u00f3n durante 6 meses. Para llegar a una aplicaci\u00f3n, la fase de desarrollo del producto tiene que ser estandarizado ya que esto permite que sea replicable\u201d.<\/p>\n<p style=\"text-align: justify\">Adem\u00e1s esta iniciativa quiere ser muy cercana al usuario final y apunta a concientizar a la ciudadan\u00eda para que no consuma s\u00f3lo las grandes especies porque muchas est\u00e1n en veda o en peligro de extinci\u00f3n; mientras que existen otras que tienen igual o mayor potencial, pero que no se consumen por desconocimiento.
